The menu for the pop-up is designed as a journey through bold flavours and familiar favourites. Small plates include a smoky Smoked Pork Pickle served with soft pao, Ethiopian-inspired Kitfo beef tartare with warm pita, Smoked Spicy Eggplant Pâté paired with creamy labneh, and the fresh, aromatic Isaan Grilled King Mushroom Salad. Mains feature the chef’s indulgent classics: Char Siu Chopped Smoked Pork Sandwich with crisp fries, Singapore Laksa Noodle Soup with smoked chicken or vegetables & Nasi Lemak with beef or eggplant rendang. Dessert is Kerala Fried Banana served with rum, butter, and ice cream, rounding off the menu with a sweet, nostalgic touch.
Tushar Fernandes and Nikhil Chittiappa, partners at Monkey Bar, said, “We’re thrilled to have Chef Gautam join us for this edition of Flavour Riot. Bringing back his signature classics fits perfectly with the celebratory and nostalgic spirit of the pop-up, and we’re excited for our guests to experience these dishes at Monkey Bar.”
Monkey Bar’s Flavour Riot continues to highlight the city’s culinary creativity while celebrating nostalgia, indulgence, and the joy of rediscovering signature flavours.
