The Collaboration No One Saw Coming: INJA x Gaggan

INJA, Delhi’s forward-thinking Indian-Japanese dining destination by Atelier House Hospitality, will host an exclusive two-day collaboration with culinary icon Chef Gaggan Anand and INJA’s Head Chef Adwait Anantwar on 11 & 12 October 2025.

What began as an impromptu conversation between Atelier House Hospitality CEO Panchali Mahendra and Chef Gaggan at the Asia’s 50 Best Restaurants has evolved into one of the most anticipated collaborations of the year.

Chef Gaggan has long been celebrated for his fearless, genre-defying approach to gastronomy. His cuisine doesn’t conform to regions or categories, its pure expression, playful and provocative, challenging expectations while delivering unforgettable flavors.

His Bangkok restaurant has consistently ranked among the best in the world, known for its inventive storytelling and rule-breaking menus.

At the same time, Chef Adwait has been steadily shaping INJA into a stage for experimentation, where Indian flavors meet Japanese precision. His work emphasizes clarity, balance, and a fine-tuned interplay of textures and tastes, creating dishes that surprise while feeling effortless.

Though their styles are distinct, Gaggan’s bold provocations and Adwait’s meticulous craft, their philosophies share a common thread: a refusal to be confined within the lines, and a pursuit of food as an experience rather than just a meal. This collaboration brings those perspectives into dialogue, crafting a tasting menu where spontaneity meets structure, rebellion meets restraint, and two creative forces find harmony through contrast.

The INJA x Gaggan collaboration will take place on 11 & 12 October 2025 at INJA, The Manor, New Delhi. With highly limited seating, the experience will be available in two exclusive seatings only, 7:30 PM for dinner on 11 October and 1:00 PM for lunch on 12 October, priced at INR 25,000 plus taxes per guest.
