Como Agua Expands Into Full-Scale Restaurant and Bar at Goa’s Vagator beach. Como Agua will be expanding into a complete bar and restaurant from a pizzeria and Negroni bar. This expansion will now let the Como Agua perform at full scale as a restaurant and bar with an elevated food and beverage program.

Launched in March 2023 by founders Arjun Jaiswal and Saniya Puniani, the venue now offers a broader dining selection alongside an inventive cocktail menu built on locally sourced ingredients.

Chef Amit Kumar will be heading the food program, whose experience spans beyond the Neapolitan pizzas.

The present menus include mouthwatering dishes like Red Snapper in chili tomato broth with curry leaf oil, Chicken Chettinad with Malabar parotta Canape. Furthermore, the restaurant also serves dishes inspired by globally well known dish like lobster roll with sweet potato chips and Japanese soba noodle salad.“We wanted to retain the authenticity of our pizzas while offering a menu that reflects both regional inspiration and global influences,” said Kumar.

Head Mixologist Aman Dhiman will be heading the beverage side. He will be curating the cocktail selection, which will be emphasizing the Indian ingredients with signatures like She’s perfect – a clarified gin with watermelon and two honeybees, a tequila with smoked honey and raw mango pickle juice.

“Our focus is on experimentation while keeping local flavors at the heart of every drink,” Dhiman explained.

The venue also makes its own mozzarella in-house using A2 milk and has introduced a specialty coffee program. Beyond dining, Como Agua hosts Saturday night live music sessions, creating what Jaiswal calls “a complete lifestyle space where food, drink, and atmosphere come together.”
