On Saturday, 2nd August 2025, Olive Bar & Kitchen, Bandra welcomes Siren—Bangalore’s only Asian cocktail bar—for an exclusive one-night takeover. The event marks Siren’s debut outside its home city, bringing its distinct Southeast Asian-forward philosophy to Mumbai’s most iconic courtyard.
What unfolds is more than a guest shift—it’s a collaboration between two defining voices in Indian hospitality. Olive Bandra, a pioneer of Mumbai’s culinary and nightlife culture, plays host to Siren, a bold new addition to the Olive family that has rapidly become a standout in India’s cocktail landscape. It’s a meeting of legacy and momentum—of experimentation and deep-rooted craft.
Founded by The Olive Group in partnership with Silverback Ventures, Siren was conceptualised not as a themed bar, but as a space where Asia’s drinking cultures could be expressed with clarity and intention. Created in collaboration with leading Indian bar collective Countertop, Siren reimagines traditional techniques—ferments, highballs, tea extractions, savoury spice infusions—into a cocktail language that is modern, minimal, and deeply regional.
For Olive, the takeover is a natural extension of its belief in long-term creativity and giving its venues space to evolve distinct voices.

Leading the evening is Akshay Singh, Head Mixologist at Siren, and one of the country’s most respected flavour minds. Known within the industry as The Bitters Alchemist, Akshay’s approach blends classic rigour with Southeast Asian flavour logic—resulting in drinks that are layered yet light, expressive yet disciplined.
His philosophy centres on emotion and intuition. “For me, cocktails are about connection. Technique matters, but it’s about how a drink feels—what it says without saying anything,” says Akshay. “This takeover is special not just because it’s our first, but because it’s with Olive. That’s not just a brand—it’s family, and it’s one that’s always stood for craft and courage.”
The evening’s compact menu features four cocktails, each built with Siren’s signature philosophy of restraint, clarity, and regional memory. There’s Bang Bang, a tequila-forward drink layered with house-made bang bang sauce, Sichuan chilli and subtle heat; Peking Duck, which uses duck fat-washed bourbon infused with hoisin, plum, and a hint of sesame for richness and ritual; Cha Do, a minimal, tea-forward gin cocktail served warm from a traditional Chinese teapot—clean, crisp, and quietly confident, a soft flex with no garnish needed; and Green Apple Salad, where tequila, green apple, Sichuan pepper and dried chilli create a sharp, herbal nod to the classic Thai appetiser. These aren’t cocktails with ‘Asian accents’—they’re cocktails from Asia, built with a palate-first logic and cultural fluency.
