Carnival by Trèsind is rewriting the story of Bombay’s beloved summer treat with a refreshing twist. Introducing Bombay Baraf Golawala—a live gola trolley experience that brings back the sweet nostalgia of the classic street-side gola, now with a playful, boozy spin.

It all starts with a memory—sticky Bombay summers, jamun-stained lips, and red masala dripping down your chin as you savoured hand-crushed ice. At Carnival, that memory has been transformed into a cinematic experience, complete with freshly shaved ice, house-made syrups, and a touch of the unexpected.


We’ve brought the gola cart back—but made it Carnival. Every syrup is brewed in-house—no artificial colours, no shortcuts, no synthetic ingredients. Just real flavours, bold ingredients, and nostalgic masalas that pack a punch. Think Kala Khatta with jamun intensity, Kachi Kairi that stings like heartbreak, Guava Chilli that lingers with heat, and Caramel Espresso that hits like a late-night surprise”, says Rahul Kamath, Beverage Manager, Passion F&B. 

The cart is pure theatre—retro Bollywood elements, loud poster fonts, and neon chaos. Every gola is made live, drenched in flavour, spiked if you choose, and served ice-cold with flair.

  • Green Apple & Thecha: Apple sharpness with spicy thecha. Pair with Tequila

  • Guava Chilli: A fiery mix of guava and chili powder—perfect Bombay beach vibes. Pair with Vodka or Mezcal

  • Caramel Espresso: Cold brew, caramel, and sass. Pair with Whiskey or Coffee Liqueur

  • Melon Variyali: Muskmelon with saunf—melts like malai. Pair with Gin or Vodka

  • Rimzim Orange: The masala soda you never knew you needed. Pair with Rum or Whiskey

  • Matcha Yuzu: Japanese calm meets Desi charm. Pair with Vodka or Tequila

  • Nannari: South Indian root refreshment. Pair with Gin or White Rum

  • Kachi Kairi: Raw mango & masala—the OG heartbreak. Pair with Tequila or Gin
